Michel Drappier, the owner of Champagne Drappier, recently traveled to Shanghai and Hong Kong to host two champagne dinners in association with EMW Fine Wines. In addition to presenting Drappier's diversity in food and wine pairing, the dinners served as the official launch of Champagne Drappier Eclose Extra Brut, the domaine's latest champagne, in the Greater China market.

 

Champagne Drappier Eclose Extra Brut was launched at the Drappier dinner on May 25 at Meet the Bund, Shanghai.

 

 

Champagne Drappier Eclose Extra Brut was made in an egg-shaped oak barrel which Drappier bought from Taransaud, a prestigious barrel producer in France, in 2010.

 

This wooden cradle, free of angles, is where the 2012 base wine stayed. It allows the wine to drift in a gentle, unhurried motion for three years. Then the wine is matured on slats for 10 years under cork.

 

Eclose means "hatched" in English and "emerging" or "opening" in French. Drappier has waited for nearly 16 years when Pinot Noir and Chardonnay blend harmoniously within the spiral of time until its eclosion.

The wine label of Champagne Drappier Eclose Extra Brut is inspired by the Fibonacci sequence, which also represents the movement of the wine inside the vessel. The egg's continuously curved geometry encourages natural convection currents, creating a modest but constant internal circulation.

 

"The special shape allows for the wine's natural and harmonious circulation in a spiral, enhancing complexity and depth over the three-year maturation period," Michel explains.

 

The Eclose is a blend of 60% Pinot Noir and 40% Chardonnay, all from the renowned Grande Sendrée vineyards. Its soil, made of Jurassic Kimmeridgian limestone, is unique in the Champagne region, giving the cuvée a rare aromatic power and great elegance.
